About 20-30 jalapeños
Pecan, cherry, apple, or hickory wood for your smoker
- Rinse and dry the jalapeños.
- Place jalapeños on smoker's rack(s).
- Smoke at about 200° F for 3 hours.
- Preheat oven to 200° F.
- Transfer smoked jalapeños to a cooling rack and place directly on a rack in the oven. Place a baking sheet below to catch any liquids that might escape.
- Bake at 200° F for at least 10 hours.
